I love going to the farmers market. Especially the one in Matthews. It takes a little bit longer for me to get to than the Charlotte Regional Market, and in the past I’ve had trouble getting there early enough to get what I was looking for. At the Matthews market, you should be there when the doors open at 7:00 am if you want to get the goods. Check out their website – I love how informative it is – how I can check it during the week and plan my menu according to what will be there.
Everyone knows that there is nothing in life so heavenly feeling as the bed in the morning…when it’s time to get out of it. I adore lying in mine all morning – dozing off and on…clutching my pillow with a smile on my face as I slip in and out of dreams, hoping to extend them a bit more…
But this year I am saving that for Sundays. On Saturdays I am up before 7:00 a.m. and off! I’m actually enjoying it and look forward to leaving the house while everyone else is still sleeping…and that Sunday morning sleep-in is better than ever.
This past Saturday I picked up 3 kinds of spinach, 2 kinds of kale, a bunch of swiss chard, and some radishes. Ahhh…we’re eating well this week! It was so much fun stuffing all that good stuff in to my fridge after I spent an hour cleaning it out!
Last week I made a kale salad that was fantastic, and this week I was looking for another way to enjoy the raw harvest. As I was searching around for raw recipes the other day, I came across this great website and found several things I want to try. The first is a raw spinach bisque and the recipe, along with many others and great tips for eating raw, can be found here.
This is what I had for dinner tonight, and I thoroughly enjoyed it. After chilling in the fridge for a couple hours it was refreshingly cool, and the flavors of the cashews and spinach really did blend together well. The next time I make it I’ll use a smaller clove of garlic rather than the monster bulb I added to this, but other than that it was perfect.

Oh well, you can’t please everyone…I have a feeling my husband is going to opt for the spaghetti that the kids had as well once he looks at it. That’s okay – it means I can have this for lunch tomorrow when it’s hot and humid outside – perfect!
