Boost Your Iron with a Little Snack!

I’ve been having trouble getting all my iron lately, and I really want to get it through my foods and avoid supplements whenever possible.  There’s been a lot of talk going around on Nutrimirror lately regarding this and several folks mentioned pepitas.  Just one ounce  has 4.1 mg of iron – this is 23% of my daily iron requirement!

I mixed an ounce of raw pepitas with an ounce of raisins and 1/4 of a Trader Joe’s  72% Cacao Dark Chocolate Bar.  It’s so good, I’m packing it to take to work every day.  I also ordered some cacoa nibs, so when they get here I’ll try them in the mix too.

It’s a high-calorie snack, but check out the approximate nutritional stats:

I realize a lot of people want to avoid fats , but our bodies need some fat in our diet in order to absorb certain nutrients and without them, those things are going to go straight down the uh…well…you know.  😉
Also, since I made it myself and used no-salt pepitas, I know exactly what’s in it and don’t have to worry about high salt or sugar content either.

    Pepitas are always one of my favorite Cape May snack. I buy them right on the board walk before I find my spot in the sand. Never knew they were healthy little guys!

    • Really? The seagulls didn’t get them? I remember getting fries there when I was with you, and a huge flock swooped in on me – it was like out of that Hitchcock movie! I’d never experienced such aggressive gulls before – they were in my hair, ripping the fries right out of my hands…I just let go of them and ran! lol
